Super Easy 3 Ingredient Banana Oat Cookies

I'm not going to lie, after seeing these on Pinterest and Nicky's Kitchen Sanctuary I knew I had to give these a try as I've been yearning for a new breakfast staple. These are super easy to make and filling too - making the the perfect mid-afternoon snack or for in the morning paired with yogurt and fruit. 

I actually baked these several weeks ago now, but haven't got around to typing the recipe up until now and it think it's safe to say banana themed snacks have blown up recently! Banana bread, muffins and cookies seem to be everywhere, but I promise these are just as delicious (and easy to make!). They're pretty adaptable, so if you want to make your cookie firmer, just add more oats and if you want to make them healthier, you can always switch out the chocolate chips for fruit or have them plain with just a dollop of golden syrup or honey added to the mixture. 

Ingredients - 

1 Banana 
80g Oats 
75g Chocolate Chips/Raisins/Fruit of choice. 
Honey or golden syrup.    

Method -

Preheat the oven to 180 degrees and prep a baking tray with parchment paper. 

Mash the banana in a bowl until smooth. Add the oats and stir until they're all covered. 

If you want to make your cookies gooier, add 1 tablespoon honey or golden syrup to the mixture now. You can skip this part. 

Add the chocolate chips or fruit to your mixture and stir until it's all mixed in. 

Spoon the mixture into balls, pressing the back of the spoon to make them into cookie shapes. These will not spread or rise in the oven, so make them the desired shape you want before cooking. 

Place them in the oven for 12 minutes or until lightly brown. Wait to cool and serve!
