With Pancake Day coming up, I feel like it is only right to share a favourite recipe of mine on the blog. Although I love the traditional crêpe style, I do love a big stack of fluffy american pancakes drizzled with golden syrup and topped with an array of juicy fruit.
I know that this is simple, but if you're looking for an easy pancake recipe this Pancake Day, then look no further.
Ingredients (Makes 15 pancakes)
200g Plain Flour
2tsp Baking Powder
40g Golden Caster Sugar
Golden syrup/Strawberries/Any toppings you desire
Oil for frying
Start off by mixing your plain flour, baking powder and golden caster sugar together in a bowl.
In a separate bowl, start whisking your eggs. An electric whisk would be best as you want to get the eggs as frothy as you can get them. The thicker the egg consistency, the fluffier the pancakes will be.
When whisked, add the eggs and milk to the other mixture and mix until smooth.
Heat the frying pan up with oil and pour a circular round of batter into the pan. Cook until it starts to loosen from the pan and then flip to cook on the other side. Remove from pan and then repeat.
Serve with your desired topping and enjoy!
