I feel like banana bread has become popular recently and I'm all for jumping on the bandwagon. I have baked this several times and perfected the recipe to my taste, so I want to share it with to you today.
The reason I love this recipe is that it can be used by beginners with ease as you quite simply mix all the ingredients in at once after mashing the bananas if they need it. It rises beautifully, tastes delicious and you'll be back for a second slice in no time at all.
2 Overly Ripe Bananas (if your bananas aren't ripe, put them in a warming up oven to brown them slightly. Update: Leave them to cool before you touch them).
150g Plain Flour
150g Golden Caster Sugar
2 Tbsp Milk/Dairy Free Alternative
100g Butter (I use a dairy free option as I prefer this)
1 1/2Tbsp Baking Powder
1 Tsp Vanilla Extract
100g Dark Chocolate Chips
After greaseproof papering my tin and preheating my oven to 170C, I start by mashing my two ripe bananas.
Mash the bananas until smooth and then add your butter, eggs, vanilla extract and milk. Mix until smooth and then add in your flour, sugar and baking powder. Once as smooth as you can get it, add in your dark chocolate chips.
Spoon your mixture into your greased tin and put in the oven for 45-50 minutes, checking regularly.
Once golden brown, remove your banana bread from the oven and set aside for 15 minutes, before removing from your tin and leaving on a wire rack to cool - Enjoy!
